Cheese Cake & Choc chip cookies..

actually lupa nak amik gmbr.. dah nak abis..
 
tade keje.. hehe.. tekstur dia.. sedap tau cookies resepi nih..

lepas try buat roti.. Fatin teruskan usaha utk belajar masak2 nih dgn cuba Cheese Cake & Chocolate Chip Cookies.. huhu.. Cheese Cake nyer resepi sgt senang.. Nina yg bagi.. Nina kata ade dia tulis kat kotak cheese cream Philadelphia tuh.. tapi mujur gak Nina bagi kat Fatin.. sbb nyer.. kotak cheese cream philadelphia kat sini tulis Cina.. mane faham maa.. huhuhu.. cookies tuh pulak, amik from fp mamafami.. resepi Zack.. sgt sedap.. hehe.. so saje Fatin nak share gmbr & resepi.. Tuk Cheese Cake, Nina kata sedap masuk fridge semlman.. biar dia keras skit.. Fatin lak.. hehe.. fridge tak sejuk sgt.. tunggu semlman pun tak keras2.. last2 buat makin sejuk fridge baru lagi best.. huhuhu.. respei cheese cake nih sesuai kalu org tade oven pun bole try.. sbb masuk fridge jer..

Crumble cheese cake
-2 cups biskut marie
70g butter - melted
1 teaspoon cinnamon (optional)
50g hazelnut(toasted) (optional)

filling
2x250g Cream Cheese -softened to room temperature
3/4 cups caster sugar
2 table spoon lemon juice
1 cup whipped cream /cream

toppings
melted cooking chocolate


1.combine base ingredients.Press two thirds of the mixture into a 20cm
pan. Chill.
2.Beat cream cheese and sugar until smooth. Fold in lemon juice and
cream.Pour mixture into tin.
3.Sprinkle the remaining crumb over cheese cake. Chill for at least 2
hours

CHOCOLATE CHIP COOKIES (ZACK)

Ingredients:

220g butter
100g white sugar
80g brown sugar
1 egg
150g flour,sifted
100g rice flour (tepung beras)
100g custard powder
1 1/2 teaspoon baking powder
5g cocoa powder
a pinch of salt

How to make:
1. Cream butter and sugar until well blended. Add in egg. Mix some more.
2. Add in dry ingredients and mix in thw mixer for 1 min or so. Stop the mixer and mix some more using spatula or wooden spoon.
3. Divide into 3 even portions to make Double Chocolate,Chocolate Chip and Butter Pecan cookies.

Here are the extra ingredients to make 3 types of cookies:

For Double Chocolate Cookies:
30g semi sweet chocolate ships ( I like Hershey's )
50g crushed walnuts
15g cocoa powder

Add in the extra ingredients into 1 of the divided portions and mix well. Wrap in saran wrap and refrigerate overnight.

For Chocolate Chip Cookies:
30g semi sweet chocolate chips
50g crushed walnuts/almonds ( any other nuts would do as well)

Add in chocolate chips and nuts into dough and mix well.Wrap in saran wrap and refrigerate overnight.

For Butter Pecan Cookies:
30g semi sweet chocolate chips
50g pecans
20g butter
2 tablespoons Butter Caramel Sauce
1 tablespoon flour

Sauté pecans in melted butter on a small saucepan until the butter turns slightly brownish. Remove from heat. Take out pecans and crushed it into smaller bits and pour in remaining butter into cookie dough. Add 2 tablespoon of butter caramel sauce and flour. Mix well.Wrap in saran wrap and refrigerate overnight.

Before baking, take out the cookie dough from the refrigerator and let it stand in room
temperature for 10-20 minutes ( or until the dough is not too hard ). Spoon out dough to
make small potions of about 10-15g per cookie and arrange on cookie sheets.
Baked in a preheated oven (180 Degrees ) for 10-15min per batch/tray.

Makes about 80-90 cookies.

You can alter the recipe and not necessarily divide it into 3. Remember to triple the Extra Ingredients if you're planning on making just one type of cookie with the dough

another lunch with expatriates' wives.. but today there're six of us.. Michele, Mei, Faye, Emy, Susan &me.. we went to Hutsane? a Japanese Rest.. as usual.. Fatin kene org dtg amik.. tumpang Mei & Michele.. mujur la dorang baik sgt nak duduk berdekatan Capital Paradise.. they're wives of 'big bosses'.. but they so nice ppl.. cam tadi.. so concern about my food.. sbb last time.. bila g non-muslim rest.. Fatin ckp Fatin tanak ikut laa.. then this time they said.. okay.. then we'll buy you meal from halal restaurant and then we go and eat there together at the Japanese rest.. huhuhu.. tp td ikan.. Fatin mkn laa.. row fish, seafood sushi.. huhuhu.. even.. they respect and help out with my prayer.. tolong ckp kat org hotel Fatin need privacy space nak perform prayer.. Zohor tadi solat kat Hotel Reinassance.. I really enjoy this lunch.. Farzana was okay.. tp memula she's not in very good mood.. then turn up to be okay laa..

semlm.. tgh hari.. tetiba Kak Zaleha called ajak dtg mkn2 kat rumah dia mlm tadi untuk surprise birthday suami dia.. Abg Bakar.. huhu.. disebabkan lately kami agak rapat/baik dgn Kak Zaleha & Abg Bakar.. so kami pk.. pegi je laa last minute nyer invitation.. pasal arituh Farzana ade sakit pun Kak Zaleha tolong g belikan n hantarkan ubat.. hehe.. kami smpi a bit lewat skit from 'birthday boy'.. nak buat camne.. tade keter.. nak bergerak payah then teksi lak payah gak skit nak cari memlm.. huhu.. Farzana memula very well behaved.. dok diam.. ikut ckp mama.. aunties sumer puji Farzana.. dia dok tepi Mama perhatikan org.. sbb ramai org.. Farzana tak biasa.. then lepas lama skit.. enjin dah panas.. dia pun start la berkawan ngna bebudak lain kat situ.. suka sgt dia kat 'Adik Fifi Kakak'.. hehe.. Fifi nih anak bongsu.. so selalu dah biasa jadi adik.. bila nih kwn ngan kwn2 lebih kecil.. jadi ini la nama Fifi gave to herself semlm.. Fifi suka nak bawak/main n kasik ape2 kat Farzana.. Farzana pun ngekor jer kakak angkat dia sorang nih.. lucu tgk.. Fatin pun tak sempat nak control Farzana semlm.. tika dpt.. hehe.. Fatin buang gula2 tuh.. menu semlm nasi kerabu ngan mee ape ntah.. berkuah cam bandung.. huhu.. main mkn jer Fatin nih.. so these are pics from semlm..

Breakfast with homemade bread/bun

pagi nih Fatin buat roti sendiri.. try resepi from fp Mamafami.. (basic bread recipe nyer) thanks so much for sharing the recipe.. so excited sbb ok la juga.. roti naik.. jadi.. cuma, roti sausage.. tepi n dalam dia lambat skit masak.. but I learnt from mistake.. kene buat nipis2 skit.. tak sempat Ayah nak try yg nih dulu before g keje.. blk nanti ye Ayah.. huhu.. Fatin simpan 2 sausage breads utk Abg..

p/s- maybe la tade la nampak cam best sgt.. tp fatin sgt excited sbb nih first time Fatin buat roti.. org baru dpt oven.. huhu.. hehe.. mintak2 oven tuh panas la sentiasa.. jgn awal2 jer.. kui kui..

BASIC BREAD RECIPE (Roshayati Johari)

Ingredients :

(A)
500g bread flour/high protein flour
100g sugar
1 teaspoon salt
30g milk powder
1 teaspoon bread improver (optional)
1 teaspoon bread softener (optional)
4 teaspoons instant dry yeast

(B)
250ml water
1 egg (lightly beaten)

(C)
40g butter
40g shortening

Method :
1. Mix well all ingredients in (A)
2. Add (B) into (A) and knead till smooth.
3. Add (C) and continue kneading till smooth and shiny and dough does not stick to your hand.
4. Leave to prove for 30 - 40 minutes.
5. Punch down the dough to let the air out.
6. Divide the dough according to the weight you wish. Make into balls and leave to rest for 10 minutes.
7. Shape accordingly.
8. Leave to prove for 40 minutes - 1 hour.
9. Bake till golden brown.

Note :
To make this Sausage Mix Vegetable Buns, I divided the dough to 70g each. Shape it and then sprinkle some mix vegetables on top. Pipe some mayonaise and tomato sauce.
[Edit : For ingredient (C), you can also use 80g margarine OR 80g shortening, instead of 40g butter + 40g shortening ]

note from Fatin: Fatin tade penimbang.. so Fatin pakai cup beras.. (nak buat camne.. serba kekurangan nih buat keje.. hehe..) so Fatin tak berapa berani nak kasik 'resepi' Fatin sbb ikut ukuran cup la pulak.. tapi kalu ade yg nak.. bila Fatin ade masa Fatin update pasnih Fatin letak.. then, Fatin tak pakai shortening.. so Fatin ganti, butter jadi 80g.. Fatin cairkan sikit butter.. (dulu ade belajar kat kelas.. cairkan cara double boiled ker nama dia.. lupa dah.. ) tp panaskan air, letak bowl atas air tuh.. nih cara nak cairkan butter ngan cooking chocolate.. tp bole je gak panaskan slow atas api.. kot.. yg optional pun Fatin tak buh.. kalu dia tak naik/kembang biar dulu.. masa biar tuh.. fatin tutup ngan kain.. kain lembap skit.. takde la lembap sgt.. tp tak kering la kain tuh.. uli2 tuh.. fatin tambah2 skit air n tepung till dough cam ok.. tak melekat kat tgn n bekas.. selamat mencuba!
